So I got a little excited last night and went overboard on the whole banana thing. I had some bananas ripening on the counter and I've been dreaming about chocolate for days now.

So now I have two simple and delicious recipes to share with you today focusing around those two ingredients.
Never Been Better Banana Bread
Servings: 1 Loaf
I have made banana bread one thousand times, but finally after combining a bunch of different recipes. I have perfected the recipe for me :)
1/2 cup sour cream
1 cup sugar
2 eggs
1 tsp vanilla
1/3 cup crunchy peanut butter (secret ingredient)
2 ripe bananas, mashed
1 1/2 cups flour
1 tsp baking powder
pinch of salt
1 cup chocolate chips
1 cup walnuts, crushed
1. Preheat oven to 350F. Spray a 9x5 pan.
2. Combine sour cream and sugar in a mixer. Mix well. Add eggs one at a time beating well after each. Add peanut butter and mix well.
3. In a separate bowl, whisk dry ingredients together (flour, baking powder, salt). Combine wet and dry mixture together. Mix well.
4. Add mashed bananas and vanilla. Mix well.
5. Fold in chocolate chips and walnuts.
6. Bake for 60 minutes. Cool in pan for 10 minutes and then carefully remove bread from pan and place on a wire rack to allow bread to cool completely before slicing.
That peanut butter will hit you when you least expect it. Enjoy!

Servings: 6 Popsicle molds
1 large banana
1 cup semi sweet chocolate chips, melted (I measure chips before melting - turns into about 1/2 cup melted)
1. Mash banana.
2. Melt chocolate chips.
3. Combine and fill molds. Freeze for about an hour.
Easy as 1, 2, 3. Literally.
